Matcha isn’t just a trendy superfood — it’s the result of a centuries-old Japanese tradition that transforms humble tea leaves into a vibrant green elixir. But what exactly goes into making high-quality matcha? From shaded fields in Uji to your frothy morning cup, here’s how matcha is made — from leaf to latte.
1. Shading the Tea Plants
The journey begins in early spring. About 20–30 days before harvest, the tea plants (specifically Camellia sinensis) are shaded using bamboo mats or black netting. This process:

2. Harvesting Young Leaves
Only the topmost, youngest leaves are handpicked during the first harvest (called ichibancha) — typically in May. These leaves are the most tender, nutrient-rich, and flavourful.
3. Steaming & Drying
Immediately after harvest, the leaves are lightly steamed to halt oxidation, locking in freshness and colour. They are then air-dried flat, not rolled like in sencha production. The result? A material called tencha.
4. De-Stemming & De-Veining
Once dried, the tencha is carefully de-stemmed and de-veined. This step ensures a silky, smooth matcha powder free of fibrous texture.
5. Stone Grinding
The tencha is then slowly ground between traditional granite stones. It takes about 1 hour to produce just 30 grams of matcha! This fine powder retains nutrients and a creamy texture ideal for whisking.
