Ingredients
Matcha Cookie Dough
- 200g unsalted butter
- 100g brown sugar
- 45g white sugar
- 75g whole egg
- 22g premium matcha powder
- 6g baking powder
- 270g plain flour
- 30g cake flour
White Chocolate Matcha Ganache
- 70g white chocolate
- 55g heavy cream
- 9g matcha powder
Optional Toppings
- Raspberry compote
- Sea salt flakes
Instructions
- Begin by browning the butter over medium heat, then let it cool slightly for a richer, nutty flavor.
- In a mixing bowl, combine the brown butter, both sugars, and egg until creamy.
- Sift together the flours, baking powder, and matcha powder. Gently fold this mixture into the wet ingredients until just combined.
- Cover the dough and chill in the fridge for 1–2 hours to enhance the flavor and texture.
- Shape the dough into balls and press them down lightly on a baking sheet.
- Bake at 180°C (350°F) for 15–20 minutes, pressing each cookie gently with a spatula right after baking for a perfect chewy center.
White Chocolate Matcha Ganache
- Melt the white chocolate and mix in the heavy cream and matcha until smooth.
Optional Finish
Drizzle the cookies with raspberry compote, add a pinch of sea salt flakes, or a swirl of the matcha white chocolate ganache for an extra layer of flavour.
