What’s the difference between Ceremonial, Latte/Premium, and Culinary Matcha?
Ceremonial Matcha
We classify our "Ceremonial" products as our highest grade matcha, made exclusively from first harvest tea leaves. These tender, young leaves are carefully picked during the spring season, typically in late April to early May. Renowned for their rich nutrient content, they are abundant in antioxidants and L-theanine, delivering exceptional quality and flavour.
Ceremonial Matcha is often rich and umami in flavour.
Premium/Latte Matcha
Our Premium/Latte Matcha is thoughtfully blended using a combination of first, second, and third harvest tea leaves. Unlike our Ceremonial Matcha, which is made exclusively from first harvest leaves, this blend can offer a bolder, more pronounced flavour.
Its slightly bitter and astringent notes make it an ideal choice for lattes and other beverages, as the flavour holds up beautifully when paired with milk and sweeteners. Perfect for both everyday indulgence and creative recipes, this matcha delivers a rich taste without compromising on its nutritional benefits.
Culinary Matcha
Crafted primarily from second and third harvest tea leaves, Culinary Matcha is designed for cooking and baking due to its bolder, more pronounced flavour and slightly bitter profile. Unlike Ceremonial Matcha, which can lose its delicate taste when mixed with other ingredients or exposed to heat, Culinary Matcha retains its flavour, making it the perfect choice for recipes.
Because it uses older, more robust leaves, Culinary Matcha is also a more affordable option, specifically tailored for smoothies, desserts, and baked goods, where its stronger flavour profile can truly shine.
How should matcha be stored?
Matcha should be stored in an airtight container to protect it from light, heat, moisture, and air, which can cause it to lose its freshness, flavour, and vibrant green colour.
Key Storage Tips:
- Cool, Dark Place – Store matcha in a pantry or cupboard away from direct sunlight and heat. Avoid leaving it near stoves, ovens, or windows.
- Refrigeration – For long-term storage, refrigerate matcha to preserve its freshness, but always bring it to room temperature before opening to avoid condensation inside the container.
- Airtight Containers – Keep matcha tightly sealed in its original packaging or transfer it to an opaque, airtight tin or jar to minimise exposure to air and light.
- Avoid Moisture – Keep matcha away from humidity, as moisture can cause clumping and spoil its texture.
How long does matcha last?
Our matcha is completely natural and free from preservatives. As nature sets its own limits, we recommend enjoying it within 12 months for the best quality and flavour.
Unopened matcha can last 6–12 months when stored properly in a cool, dark, and dry place. Once opened, it’s best to consume it within 4–8 weeks to enjoy its optimal flavor, aroma, and nutrients.
Key Notes on Shelf Life:
- Unopened Matcha – Stays fresh for up to 1 year if stored in an airtight container away from light, heat, and moisture.
- Opened Matcha – Best consumed within 1–2 months for peak freshness, but it can still be used for up to 3–6 months if stored properly.
- Refrigeration Tip – Refrigerating matcha can extend its shelf life, but always let it return to room temperature before opening to avoid moisture buildup.
Signs Matcha Has Gone Bad:
- Dull Color – Fresh matcha should have a vibrant green hue; if it appears yellowish or brown, it may have oxidized.
- Flat Aroma – High-quality matcha has a fresh, grassy scent. A stale or weak aroma indicates it may no longer be fresh.
- Muted Flavor – If the taste is flat, bitter, or lacks umami, it may have lost its quality.
How do I prepare matcha?
- Sift the Matcha – Use a fine sieve to sift 1-2 teaspoons of matcha powder into a bowl to prevent clumps.
- Add Water – Pour in 70-80ml of hot water (about 70°C). Avoid boiling water to preserve flavour and nutrients.
- Whisk – Using a bamboo whisk (chasen), whisk briskly in a "W" or "M" motion until the matcha is frothy and smooth.
- Enjoy – Sip it straight or add milk and sweetener for a latte-style drink.
